3 very ripe bananas (black in color would be best)
1 1/2 cups all-purpose flour
1 tsp. soda
1/2 tsp. salt
1 1/2 tsp. vanilla (I use Mexican vanilla)
1/2-1 cup chopped pecans (or walnuts, whichever you prefer)
1/2 cup sour cream
1 1/2 cup sugar
1/2 cup real butter (1 stick)
Mash up bananas.
Cream butter,sugar and eggs together. Set aside.
In another bowl whisk flour, soda and salt. Pour mixed dry ingredients into butter, sugar and eggs. Mix well. Now add sour cream and mix. Add vanilla.
Add 1/2-1 cup of chopped pecans or walnuts.
Butter a loaf pan and pour batter in.
Bake at 325 degrees for 1 hr. or until top is light brown and when a cake tester is inserted it comes out clean.
