Pumpkin Pudding

From my friend and former neighbor Sandy. This is even better than pumpkin pie.

Preparation time: 1 hr +
Cooking time: 50 min

Difficulty: Easy - for beginners
Serves: 9-12


1 can pumpkin
1/2 c sugar
1/4 t. salt
1/2 t ea, nutmeg & cinnamon
1/8 t. cloves
2 eggs, beaten
2/3 c evaporated milk
1/4 c milk
1 small "Jiffy" yellow cake mix (or 1/2 reg size box
1/2 c finely chopped nuts.


Combine well pumpkin, sugar, spices, eggs and both milks; pour into greased 8" square baking pan.

Sprinkle cake mix evenly over top. Drizzle with 1/3 c melted butter. Top with 1/2 c finely chopped nuts.

Bake @ 350 for about 50 min until nicely browned.
