Mint Chocolate Chip Fudge

Ingredients

3 1/4 cups white chocolate chips (2 bags)
2 tbsp. butter
1 can sweetened condensed milk
2 - 3 mint (not peppermint) extract
green food colouring
3/4 cup mini chocolate chips

Method

Line an 8 x 8 cake pan with tin foil and lightly spray with cooking spray. Microwave white chips and butter until smooth. (about 3 minutes at a time, stir, cook). COOL
until completely cooled. Stir in 1/2 the mini chips. Press into the prepared pan. Top with the rest of the mini chips. Refrigerate at least two hours.

***IF YOU DON'T COMPLETE COOL IT, THE MINI CHIPS WILL MELT. STILL TASTES YUMMY BUT IT'S NOT SO PRETTY****
