Day After Thanksgiving Turkey Soup

cooked turkey carcass ( I use the turkey thighs or chicken)
4 carrots, sliced
2 celery ribs, sliced
I onion chopped (not too fine)
3 potatoes, peeled and chopped into bite sized chunks
12 c. chicken stock
2 bay leaves
2 c. turkey or chicken meat, cooked
1 c. frozen vegetable of your choice (peas, green beans, lima beans)
Sat and pepper to taste


In a large pot combine turkey (or chicken carcass) carrots, celery, onion, potatoes, stock and bay leaves. Add more water if needed to cover turkey completely. Bring to a simmer over medium heat. Simmer 2 hours. Remove carcass using tongs and let cool. Pick any meat from bones and return t soup. Add more turkey (or chicken) and frozen vegetable. Heat until steaming. Season with salt and pepper. Discard bay leaves before serving.
