Boiled Custard - Dottie's version

My grandmother made one similar, but I can't put my hands on the recipe at the moment. Will add Dottie Jones' here and give them a comparison.

Difficulty: Easy - for beginners
Serves: a bunch!

Ingredients

1 gallon whole milk, divided
3.5 cups sugar, divided
12 eggs, beaten
1 TB (or more) vanilla

Method

Warm 1/3 gal. whole milk and 1 cup sugar. Add to 12 eggs (beaten) and 2 1/2 cups sugar. Add to 2/3 gal. milk. Cook slowly, stirring constantly. Add 1 tablespoon (or more) vanilla.

(Original recipe was for 3 cups sugar and cook over boiling water. Too sweet, and too complicated.)
