Chicken Curry

2 cups jasmine rice
chicken broth
1 pound chicken, chopped into 1-inch cubes
3 tablespoons butter
1 cut matchstick-sliced carrots
1/2 cup raisins
1 teaspoon curry powder
3 cloves garlic minced
1 container (8 0unce) plain yogurt
chopped peanuts (optional)
sliced scallions (optional)
toasted coconut (optional)
cilantro, chopped (0ptional)


Prepare rice as directed on package using chicken broth instead of water. Melt butter in skillet. Brown chicken and cook through. Add carrots, curry and garlic. Saute until carrots are softened. Add raisins and yogurt. Heat through. Serve over rice. add optional toppings.
