3 very ripe banana's, mashed
1 teaspoon baking soda
2 Tablespoons hot water
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter
1 cup granulated white sugar
Preheat oven to 350 degrees. Grease one 9x3 loaf pan.
Mom mashed the banana's on a plate then she added the baking soda, hot water and vanilla. Set aside.
Sift together, flour, baking powder and salt. Set aside.
Cream together, butter, sugar and add eggs one at a time.
Alternately combine flour mixture with the banana mixture. Start with flour and end with flour in to creamed mixture.
Pour batter into a greased baking pan. Bake at 350 for 60 to 65 minutes or until toothpick inserted comes out clean. Cool.
