2 Vidalia onions, thinly sliced
2 T butter
3-6 oz of ham, bacon, or Canadian bacon, diced.
2 stalks of broccoli, cut into small florets, or 1 lb asparagus cut into one inch pieces
1 1/2 to 2 c shredded cheese -- cheddar or swiss
1 c heavy cream
1 t garlic powder
1 t Herbs de Provence
Preheat oven to 350 degrees.
Caramelize the onions in 2 T of butter and a sprinkle of kosher salt over medium heat for about 10-15 minutes. At the end, toss in the ham or bacon for a minute or two.
Spray a 9x9 inch pan with butter-flavored Pam. I like my Pampered Chef stoneware pan. Add the onions and ham to the bottom. Layer broccoli or asparagus on top. Sprinkle cheese evenly on top.
Whisk together the eggs, cream, garlic powder and herbs. Pour evenly over the ham, vegetables, and cheese. Let settle for 5 minutes.
Bake for about 30 minutes or until the top is golden brown. When serving from the pan, turn it over on the plate so the browned top substitutes for the bottom crust.
