Vegan Quinoa Fruit and Vege Salad

I just made this recipe up out of the ingredients in my house this morning. It turned out to be really yummy!!

Preparation time: 15 minutes
Cooking time: 15 minutes

Serves: 4

Dietary guidance: v v 


1 cup dry quinoa
2 tomatoes, chopped
1 avocado, chopped
1 granny smith apple, chopped
1 small red onion, chopped small pieces
Juice from 1 lemon
1/3 cup chopped walnuts
1/8 cup olive oil
1/3 cup nutritional yeast
2 tablespoons maple syrup
2 tablespoons of ground flax seeds
salt to taste


1. Cook quinoa as directed.

2. Mix all other ingredients in a bowl. Add cooked quinoa.

Then it's ready to serve!!
