Cook pasta for half the cooking time. Set aside 1 cup of pasta water and drain. Drizzle pasta with olive oil and toss so it doesn't stick. In a saute pan, heat up a large dallop of ghee and add a lot of fresh ground pepper, saute for 30 seconds and add garlic and lemon zest. saute for 30 seconds to a minute. Add pasta water and juice of half the lemon and then pasta and cook in sauce for remainder of cooking time. Turn off heat and add a healthy portion of grated parmesan and romano. Squeeze remaining lemon over top and add salt to taste and serve.
