Snickerdoodle Drops

This is an oatmeal snickerdoodle that works as a drop cookie. No shaping required.

Preparation time: 20 minutes
Cooking time: 8 to 10 minutes

Difficulty: Easy - for beginners
Serves: 4 1/2 dozen


1 cup butter
3/4 cup brown sugar, firmly packed
3/4 cup sugar
2 large eggs
1 3/4 cups flour
2 cups oatmeal
1 tsp cinnamon
1 tsp Baking soda
1/2 tsp salt

----- sprinkle topping -----
1 Tbs sugar
1 tsp cinnamon


Preheat oven to 375. Grease cookie sheet. In large bowl beat together butter, brown sugar until light and fluffy. Add eggs, mix well. In a medium bowl, combine dry ingredients. Mix with creamed mixture. Mix cinnamon and sugar topping. Drop by rounded teaspoons on to prepared cookie sheet. Sprinkle each with topping.

Bake 8-10 min. Cool 1 minute on cookie sheet before removing to cookie rack. Makes about 4 1/2 dozen.
