2 tablespoons cooking oil
1 /4 pineapple, peeled, cored
6 ounces peeled, deveined raw shrimp
2 green onions
2 cups cooked rice, cooled
2 tablespoons soy sauce
1 teaspoon fish sauce
1 teaspoon roasted sesame oil
2 tablespoons cashews, coarsely chopped.
Cut pineapple into 1/2" chunks and set aside. Slice shrimp lengthwise and set aside. thinly slice green onions, separating the green and the white parts and set aside. Heat a wok or large frying pan over high heat until pan begins to show white smoke. Add oil and when it is shimmering, add pineapple and stir-fry for about 1 minute until it is blackened in spots. Add Shrimp and white part of green onion and cook about 1 1/2 minutes until shrimp are pink and almost cooked through. Add rice and stir-fry until heated through. add soy sauce, fish sauce, and sesame oil and stir-fry for 1 minute. Transfer rice to serving platter. Sprinkle with green parts of onion and cashews. Serve.
