Difficulty: Easy - for beginners
1 lb large cleaned shrimp
1 T olive oil
1 T Italian seasoning
1/4 t crushed red pepper flakes
3/4 c uncooked orzo pasta
2 cans 14.5oz ) fire roasted diced tomatoes
1/2 c chopped black olives
2-3 oz crumbled Feta cheese
juice of 1 lemon
1. Toss shrimp with oil, Italian seasoning and red pepper in a small bowl. Set aside 10 min
2. Cook orze in boiling water according to pkg directions, Drain well.
3.Heat lg skillet over med high heat. Add shrimp and sauté 2-3 min just until they turn pink. Add tomatoes and olives. Simmer 5 min, remove from heat.
4. Toss with orzo pasta and Feta, add 1 T or more according to taste. Serve hot.
