Difficulty: Easy - for beginners
2 lbs cooked ground beef
1 packet taco seasoning
1 (drained) small can diced tomatoes
1 (drained) small can chopped green chili's
1/2 - 1 cup shredded cheese
1 pkg flour tortillas
Brown beef and follow package directions on taco seasoning. Mix the beef in a bowl with the cheese, tomatoes, and chili's. Put about 2-3 Tbsp. of the mixture in the middle of the flour tortillas. Fold the Tortillas over the mixture all 4 directions towards the center - picture shows folded pocket. Place fold side down on baking sheet and bake at 350 for 10 min. Turn the pockets over and bake another 8 minutes. Remove and let cool.
This can also be done with other ingredients - I also make a breakfast pocket with 1 lb ground sausage - 6 scrambled eggs and 1/2 cup cheese. Follow same method.
