4 Ripe, sweet tomatoes sliced
3 Avocados sliced in wedge lengths
1/2 Medium/small red onion, thinly sliced
A little olive oil
A little balsamic vinegar
Slightly soften the onion in a saute pan with a little oil and balsamic vinegar. Gently mix all veggies together and toss in the dressing, which is 1 part oil to 2 parts vinegar. Salt and pepper to taste. Serve on a bed of spring-mix or other soft young lettuce leaves.
