1½ cups all-purpose flour
¾ cup whole wheat flour
¼ cup brown sugar
2 tablespoons wheat germ
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon ground cinnamon
2 medium ripe bananas, mashed (about ¾ cup)
1 can (8 ounces) crushed pineapple, well drained
2 tablespoons canola oil
1 egg white


Preheat oven to 350 degrees. Spray a 9” x 5” loaf pan with vegetable cooking spray. Set aside. In a large bowl, combine the all-purpose flour, whole wheat flour, brown sugar, wheat germ, baking powder, baking soda and cinnamon. Mix well. In a small bowl, mix banana, pineapple, oil and egg white until well blended. Add banana mixture to dry ingredients, stirring just until combined. Do not overmix. Using a rubber spatula, scrape the batter into prepared pan. Bake until top is golden and a toothpick inserted in centre comes out clean, about 50 to 55 minutes. Place pan on a wire rack and cool for 10 minutes. Turn loaf out onto rack and cool completely.
