Applesauce gives this light quick-bread favourite its extra-moist texture.
It is studded with apples and crunchy nuts.

1½ cups all-purpose flour
½ cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground cloves
1 cup granulated sugar
1 cup unsweetened applesauce
3 tablespoons vegetable oil
2 egg whites
1 large egg
1 tablespoon brandy or orange juice
1 teaspoon grated lemon peel
1 small apple, peeled, cored and coarsely chopped (1 cup)
¼ cup finely chopped walnuts


Preheat oven to 350 degrees. Spray a 9” x 5” loaf pan with vegetable cooking spray. In a medium bowl, combine all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, salt and cloves. Mix well. In a large bowl, combine sugar, applesauce, oil, egg whites, egg, brandy and lemon peel. Mix well. Add flour mixture stirring, until just combined. Do no overmix. Stir in apple and nuts. Scrape batter into prepared pan. Bake bread until top is golden and a toothpick inserted in centre comes out clean, about 1 hour. Place pan on a wire rack and cool and for 10 minutes. Turn loaf out onto rack to cool completely.
