Prawn and Broccoli Curry

A simple tasty curry - you can also use chicken or sausages, just make sure the meat is cooked properly first. I also add extra veg like chopped onions or peppers with the ginger.

1 ½ tbsp vegetable oil
2.5 cm (1in) fresh ginger, grated
350g (12oz) broccoli florettes
1 tsp garam masala
1 tsp chilli powder
2 tsp tomato paste (puree)
2 garlic cloves, crushed
12 raw king prawns, peeled
2 tbsp full fat plain yoghurt
Cooked basmati rice, to serve


1. Heat half the oil in a large, heavy-based frying pan over a high heat
2. Fry ginger for 30s
3. Add broccoli florettes
4. Pour in 75ml (2 ½ fl.oz) water, bring to the boil, then cover, and cook over a low heat for 5 min
5. Add the garam masala and chilli powder, then season with salt and cook for 2 mins until the broccoli is just tender
6. Meanwhile, heat the remaining oil in another heavy-based frying pan over a high heat
7. Fry the tomato paste and garlic for 30s
8. Add the prawns
9. Season with salt, stir fry for 1-2 mins, until cooked
10. Remove from heat and stir in the yoghurt.
11. Stir the prawns into the broccoli and serve with basmati rice (cooked to packet instructions)
