douse the steak in olive oil. generously add black pepper and a pinch of salt. massage allllll over that piece of meat. give it 10 mins to sit.
Slam the steak in a very hot pan.Make sure the steak isnt straight out of the fridge, it will only tense up more under the heat. 2 and a half minutes on one side (for a steak an inch thick roughly). Turn the cow over and cook for a further 2 minutes (dont move it around). For the last 30 seconds throw in a splash of red wine and let it reduce and de-glaze the pan and create a nice ass sauce.
Take the pan off the heat and let the meat rest for a couple of minutes.
Eat that bad boy, either on warm ciabatta with onion or on its own. Medium rare steak. Perfect every time lads.
