Pork and Lentil Cassoulet

This is a delicious and hearty slow cooker stew.

10 oz boneless pork shoulder
1 large onion, cut into wedges
2 cloves of garlic, minced
2 tsp oil
2 1/2 cups water
1 14 oz can chopped tomatoes
4 medium carrots and/or parsnips, peeled and cut into 1/2 inch slices
2 stalks celery, thinly sliced
3/4 cup dry brown lentils, rinsed and drained
1 1/2 tsp dried rosemary
1 tsp beef bouillon granules
1/4 tsp salt
1/4 tsp pepper


1. Trim fat from meat and cut into 3/4 inch cubes. Cook meat, onion and garlic in a skillet until meat is brown and onion is tender. Transfer to a 3-4 quart slow cooker. Add water, undrained tomatoes, carrots and/or parsnips, celery, lentils, rosemary, bouillon, salt and pepper.
2. Cover and cook on low for 10-12 hours or high for 4.5-5.5 hours.
3. If desired, garnish with fresh rosemary sprigs.
