Jim's Take On Spanish Garlic Soup

Serves: 6


8 Cups of Chicken Stock
20 cloves of garlic (minced)
2 celery stalks
I large onion
3 Cups of Tortellini
parsley ( enough to please the eye as garnish)
1 egg for each serving


Make a standard boulliabase with the stock, onion, celery, and garlic. Bring to a boil, reduce heat and allow to simmer for half an hour.Strain the broth, return the liquid to heat. Add tortellini, and cook til al dente. Remove from heat, and add just enough parsley to please the eye. Serve the soup piping hot in large bowls, and crack an egg into each. The heat from the soup will cook the egg. Voila, your mouth will be very happy !
