Quick Sausage & Chicken Gumbo

8 oz. kielbasa, cut into 1-inch pieces
2 cups roasted skinless chicken breasts (I used the meat from a rotisserie chicken)
2 Tablespoons flour
1 Tablespoon vegetable oil
1 cup chopped onion
1 cup chopped green bell pepper
1 cup okra
1 cup chopped celery
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
1 garlic clove, chopped
1 (14-oz) can diced tomatoes w/peppers & onion
1 (14-oz) can chicken broth


1. In a Dutch oven over med-high heat, combine the flour and oil and sauté for about 3 minutes.

2. Add the onion, green pepper, okra, celery, thyme, ground red pepper and garlic and cook, stirring frequently, until tender, about 5-8 minutes.

3. Stir in the kielbasa, chicken, tomatoes and broth and cook for 10 minutes or until thouroughly heated
