Japanese Shrimp Sauce

Makes 18 - 20 fluid ounces
2 cups mayonnaise
1 tablespoon ketchup
4 tablespoons rice vinegar
2 tablespoons sugar
1 teaspoon paprika
1 teaspoon garlic powder
1/4 teaspoon black pepper
1 dash hot pepper sauce
1 pinch salt
up to 4 fluid ounces water and/
or additional rice vinegar


Start by mixing the mayonnaise and ketchup in a mixing bowl (or blender if you prefer). Dissolve the sugar, salt, hot pepper sauce, and spices in the rice vinegar. Blend the vinegar/spice mixture into to the mayonnaise/ ketchup base, adding water (and/or more rice vinegar if you like it tart) slowly until the sauce is smooth and at the desired consistency. Adjust ingredients to taste.
