1 1/3 c uncooked rice
2 2/3 c water
1 tsp salt
1/2 c mayo
2 tbsp Dijon Mustard
1/4 c extra-virgin olive oil
2 tbsp red or white wine vinegar
1 tbsp curry powder
10 oz package frozen peas, thawed (baby peas are best)
1/3 c minced green onions or chives
Salt & pepper to taste
Rinse the rice in several changes of cold water till clear. Drain well
Combine Rice, water & salt in medium saucepan.
Cover the pan & bring to boil. Reduce the heat & simmer till rice is tender and water is absorbed. (15-20 mins)
Meanwhile, in a small bowl, mix together the mayo, mustard, oil, vinegar & curry. Set aside
When rice is done, spoon it into a serving bowl. Ad the dressing and mix well. Season to taste with salt & pepper. If rice is a bit dry add more oil.
Gently fold in the peas & onions. Refrigerate for several hours.
Serve cold or room temp.
