Cucumber Tomato Salad

1 garlic clove, minced
1 Tablespoon olive oil
1/2 cup white wine vinegar
1/2 cup water
1 Tablespoon granulated sugar
1 Tablespoon Dijon mustard
Freshly ground pepper
1/2 teaspoon dried oregano
1 small - medium vidalia onion
2 cucumbers
4 - 6 campari i tomatoes (Roma tomatoes also work great!)


Mince garlic clove and add to large mixing bowl. Add olive oil, white wine vinegar, water, sugar, dijon mustard, oregano, and pepper to taste. Whisk together until well blended. Set aside.

Peel, halve, then slice the vidalia onion and cucumbers. Halve then slice tomatoes. Add the onion, cucumbers and tomatoes to above and mix well. Place in a serving bowl and sprinkle with Paprika. Place in refrigerator and let chill for about 2 hours.
