Easy-peasy-quick-and-tasty pasta

An easy pasta dish for those nights when you can't face cooking for hours

* Pasta, tagliotelli or similar is good, +- 100g per person
* 1 good handful of small button mushrooms per person
* 1 good handful of baby spinach
* piece of blue cheese (gorgonzola is good if you can get)
* olive oil
* parmesan or similar
* salt and pepper to taste


1) cook pasta in boiling water for 8-10min
2) while pasta is cooking cut the mushrooms into quarters, and fry in a little olive oil until tender
3) add spinach to the mushrooms and allow to wilt down
4) toss the spinach and mushrooms into the pasta with a little more olive oil
5) crumble in the blue cheese according to how rich/strong you want it
6) sprinkle with parmesan, salt and pepper to taste
