Dietary guidance: v
1/8 teaspoon garlic powder
1 c water
1 beaten egg
1 teaspoon soft butter or oil
2 cups instant potato flakes
1 cup flour
1/2 teaspoon salt
1 teaspoon dried or fresh minced parsley
1/3 cup other things to mix in, optional (good ideas are fresh garlic, parmesean cheese, finely chopped sun-dried tomatoes, chopped pine nuts, fresh basil, etc.)
Mix garlic powder, water, egg, and butter in a food processor until blended. In a separate bowl, mix potato flakes, flour, salt, parsley, and other mix-ins. Add this mixture to the food processor and mix until a dough forms.
Roll out the dough onto a floured surface, cut it into strips, and by hand roll the strips into long snakes. Using a fork, break off a teaspoon-sized amount of the dough and roll it into a dumpling shape. Place the dumplings on a floured surface or parchment paper until you are ready to cook them.
To cook, bring a couple quarts of salted water to a boil. Carefuly add the gnocchi. Boil the ghnocchi until they float, and remove them with a slotted spoon. Serve!
