Parmesean Sage Cream Sauce

This sauce is great over fresh pasta, ravioli, tortellini, or ghnocchi.

1 tablespoon butter
2 tablespoons flour
2 cups hot milk
1 tablespoon chopped fresh sage
6 tablespoons grated parmesean
Salt and pepper, to taste


Melt the butter over medium-high heat in a saucepan. Add the flour, and mix constantly until a roux forms (the flour/butter mixture will become frothy). Don't let it burn!

Quickly whisk in the milk, bring it to a boil, then reduce the heat and simmer the sauce until it thickens. Mix in the sage, cheese, salt, and pepper, and serve.
