5 lbs green (fresh picked) peanuts
1 cup salt (or more to taste)
Wash and drain peanuts twice. Fill large pot with peanuts and cover completely with water. Add salt. Bring to a boil and simmer for several hours until peanuts are tender. Turn off heat and let peanuts sit for at least half an hour (to let the salt absorb). Can be eaten hot or cold. Freeze some for later and just boil in salt water to reheat if desired.
