1 small smoked mackerel fillet (approx. 100g) cut into bite size bits
10 cherry tomatoes
a couple of handfuls of broccoli florets
2 teaspoons of red pesto
2 handfuls of dried pasta
Roast the cherry tomatoes in the oven at 180C for approximately 20mins. Meanwhile cook the pasta according to pack instructions. While the pasta is cooking, cook the broccoli for 5mins â€“ do this by steaming it on top of the pan the pasta is in or cook it in a separate pan.
When the broccoli is ready, put it to one side till you need it. Once the pasta is cooked, drain and stir in the pesto. Turn down the heat to the minimum and add the mackerel and stir just till it heats up a bit. Add the cherry tomatoes and the broccoli and stir through.
Roast red pepper, courgette and onion and use with fewer cherry tomatoes. If youâ€™re doing this note that the other veg will take longer to roast â€“ approx. 45mins â€“ so only add the tomatoes 20mins before the end.
