Linda's Lean Mean Grilled Chicken Sandwich

This is an easy-ass way to make a mean grilled chicken sandwich. O YEAH.

Serves: 4


• 4 boneless chicken breast
• 2 tsp salt (or to your desire)
• 2 tbsp pepper (or to your desire)
• 4 tbsp butter or margarine
• 4 wheat burger buns
• fresh chopped lettuce (4 burger-sized leaves will be fine)
• 4 sliced tomatoes
• honey dijon mustard or regular mustard
• ketchup
• mayonnaise


RINSE off defrosted chicken breasts. Slice criss-crosses on one side (half-way through the breasts, not all the way so that when they're on the stove, they cook through).

SPRINKLE some salt and pepper on them.

HEAT non-stick pan for 30 secs on stove. Add 2 tbsp butter or margarine and wait for it to melt.

ADD chicken breasts to pan and cook them through, flipping them over and over--ADDING some salt and (lots) of pepper or other spices you like on the breasts as you flip 'em. COOK until the breasts are browned.

When you're done cooking the breasts, have a plate with a paper towel on it ready. You're gonna want to put the buttery breasts on them to soak off the greasyness.

NOW, SPREAD the top and bottom of the wheat buns with butter.

With another non-stick pan (or the same one, but washed), place the buttered buns on the heated pan and toast 'em until they they are a teeny weeny bit browned. (Not too much or else you'll be eating a carcinogen.)

REMOVE and PLACE the nice patted breasts on the buns. ADD lettuce, tomatoes, ketchup, mustard, mayonnaise, too and VOILA!
