Super-Quick Brownie 'Pie'

Strictly speaking this is not a pie, but brownie baked and served like a pie.
Makes a great dessert!!!

Ingredients

2 eggs
Scant 1 cup / 7.5 ounces / 210 g sugar
1/2 cup / 4 ounces / 110 g soft butter or margarine
1/2 cup / 2.5 ounces / 70 g flour
Between 3 and 4 Tablespoons cocoa
1 teaspoon vanilla extract
(optional) 1/2 cup / 2 ounces / 60 g chopped walnuts

Method

1. Beat all ingredients (except nuts) with electric mixer for 2 mins or until thoroughly mixed.
2. Stir in nuts - if using.
3. Bake in greased 9 inch pie dish (or similar)
4. Bake at 325ºF/Gas 3/170ºC for 30 minutes or until done - do not overbake, pie will still be a bit squidgy.
5. Serve cold in wedges, with ice cream or cream.
