2 chicken thighs, sliced
1 tablespoon minced ginger
Bunch of Chinese broccoli, sliced
2 tablespoons Soy bean paste
2 tablespoons oyster sauce
2 cups chicken stock
seasoning: sugar, pepper to taste, nahm pla
2 dessertspoons cornflour blended with a small amount of cold water
fresh rice noodles
Thick sweet soy sauce (ABC brand)
Fry the minced garlic, ginger and sliced chicken pieces in oil until the chicken is brown. Add chicken stock, soy bean paste, oyster sauce and shredded broccoli leaves and cook until the brocolli turns a bright green. Season with sugar, pepper, and additional oyster sauce or soy bean paste as required (note that soy bean paste is salty so you may not need nahm pla at all.) Add cornflour mixture and stir until thickened. Keep warm.
Separate the fresh rice noodles in a large microwave dish. Pour over a small amount of thick sweet soy sauce and mix to combine. Heat in the microwave until cooked.
