Beef Noodles

1 packet rice noodles (dried or fresh)
1 packet beef meat balls, sliced
sliced beef fillet
Instant beef flavour paste (Gia Vi Nau Pho brand – as per jar)
garlic oil (refer below)
Spring onions, finely sliced
Lettuce, sliced
Bean shoots, washed and drained
Thai basil leaves (optional – adds an extra dimension)

Condiments to serve with noodles and beef:
dried, ground chilli
fish sauce
preserved cabbage (Lychee brand)
sweet thick soy sauce (ABC brand)


1. Prepare the bean shoots, lettuce and spring onions
2. Prepare garlic oil – fry finely minced garlic (1 dessertspoon) in oil until golden brown, then set aside (the garlic will continue to cook for a while after taking it off the heat so remove from heat when it is a pale yellow)
3. Combine 1 tablespoon of the beef paste with 2 cups of water in a saucepan and place the sliced beef balls and beef steak in the soup. Bring to the boil and simmer until cooked.
4. Cook the noodles:
Fresh noodles – Dunk in boiling water, then drain
Dried noodles – Cook in boiling water until tender (keep testing), then drain
5. Pour the garlic oil over the cooked noodles, keep warm
6. Serve the noodles, beef ball soup mixture, vegetables and condiments – individuals to season to taste

Note: the Thai basil leaves may be added to the soup after it is cooked or served fresh with the other fresh ingredients.
