Thai Roast Chicken

1 chicken
10 cloves garlic
2 tablespoons sugar
4 tablespoons soy sauce
½ teaspoon salt
½ teaspoon pepper


5 tablespoons sugar
3 tablespoons white vinegar
½ teaspoon salt
1-2 cloves garlic
2-3 chillies, finely sliced
dash soy sauce (for colour)


Marinate chicken pieces with garlic, sugar, soy, salt and pepper. Leave 1 hour.

Place chicken on rack in baking tray, skin side down for the first half hour and bake in 180-200 degree oven for 1 hour, turning after 30 minutes.

Mix sauce ingredients in small bowl. Heat in microwave for a short while, then stir continuously until sugar is dissolved. Let cool.

Serve roast chicken with sauce.
