peanut noodles

this is a staple of my diet. Totally tasty easy Thai recipe.

Preparation time: no more then ten minutes
Cooking time: you have to cook the spaghetti

Serves: 4-6

Dietary guidance: v v 


1/2 pound spaghetti or soba noodles
1/4 cup peanut butter
1/4 cup warm water
3 TBS soy sauce
2 TBS wine vinegar (preferably rice wine vinegar)
1 TBS dark sesame oil

2 cups fresh mung bean sprouts
1 cucumber, peeled, cut lengthwise, seeded, and cut into crescent slices
Chopped scallions
Toasted sesame seeds


Cook the pasta al dente in salted water. Drain it and rinse with cold
water. Mix the peanut butter, warm water, soy sauce, vinegar, and oils. (optional:) Toss the noodles with the bean sprouts, cucumbers, and sauce. Top with the chopped scallions and/or toasted sesame seeds. This dish is most flavorful served at room temperature- but it's mad good right out of the fridge too.
