Stuffed Chicken

Beautiful breaded stuffed chicken that's easy to make, and really impresses your guests.

4 Boneless, skinless chicken breasts
1 package of Swiss cheese (or other strong cheese)
1 slice cooked ham (the thickest the deli can slice it - about a 1/2" tall)
1/2c chopped broccoli
2c bread crumbs
2tbsp Italian spices
(Italian spices can be omitted if you can find "Italian bread crumbs" with spices already mixed in)


Preheat the oven to 350.

On a cutting board and a layer of wax paper, pound the chicken breasts into a thin layer using a meat tenderizer. Slice the Swiss cheese into very thin slices, about 1" wide and 2" long. Cut the ham into long strips, about as wide as they are thick. Mix the breadcrumbs and the spices together in a separate bowl.

Near one of the ends of the chicken, place one piece of cheese, ham enough to cover the cheese, some broccoli bits and the second piece of cheese all in a small pile. Roll the chicken around the fillings as neatly as possible. Coat the whole rolled chicken in the bread crumbs.

Put all of the chicken into a baking dish, and (if desired) sprinkle some additional breadcrumbs on top. Bake for approx. 35 minutes.

Serves well with mashed potatoes and ginger-thyme carrots (search for recipe).
