Roasted Potatoes

Ingredients

2 potatoes, unpeeled and sliced into medium chunks
1/4 cup canola or peanut oil
1 clove garlic, mashed
1 teaspoon each of: parsley flakes, rosemary (chopped or crushed), chili flakes, thyme, paprika, salt, pepper

Method

1. Mix oil with the herbs, spices and the garlic. Let steep for about 10 minutes.
2. Slice the potatoes into the chunks, and toss them in the oil until well-coated. Let sit for about 2 minutes
3. Bake on a baking tray/cookie sheet/broiler pan at 400 degrees Farenheit for 35 to 40 minutes, turning once.
