Preparation time: 15-20 minutes
Cooking time: 30-45 minutes
2-3 small zuchinni, sliced in half & seeded
1/2 pound ground chicken or turkey
1/4 cup diced red onion
2 cloves garlic, crushed
1/2 cup sliced mushrooms
1/4 cup diced green, yellow or red pepper
1-1/2 cups pasta sauce
1/2 cup grated cheese of choice (I use a good aged white cheddar)
Preheat oven to 375F.
Place prepared zuchinni in a roasting pan, flesh side up.
Saute onion & garlic in oil until translucent. Add turkey (or chicken). Saute until brown. Add peppers & mushrooms and saute until tender crisp. Add pasta sauce & simmer until barely bubbly.
Stuff prepared zuchinni. Bake until zuchinni is tender (peirce with fork to check doneness). Remove from oven & sprinkle with cheese. Place back in oven until cheese melts.
Remove from oven & let stand 5 mins.
Serve with simple salad.
