500 grams ground beef
1 large onion
3 cloves garlic
1 stick of celery
2 tsp thyme
2 tsp rosemary
salt and pepper
1 tin of tomatoes (chopped)
tbsp plain flour
1 pint of milk
1/2 teaspoon grated nutmeg (optional)
150 grams pasta
grated cheese to top
Heat oven to 200 degrees
If you are lazy fling the onion, garlic, celery, carrot and optional chillies into a food processor and blitz until nice and fine otherwise do this by hand.
While this happens heat a frying pan with a little oil. Now gently fry the onion mix for about 5 minutes until it starts to change color. Now add the mince and fry till mince changes color. Once this occurs add the herbs then 30 seconds later add the tomatoes and cover the pan.
Heat a small sauce pan and add the butter and flour. Mix this till the combine to a smooth paste then slowly add the pint of milk stirring. If this goes lumpy you did it to quickly but dont worry these lumps can be squished out with a fork or a hand blender. Allow this to thicken but dont boil. You may want to stir in some grated nutmeg if you have any.
Mix the pasta with the bolognese mix and pour into an oven dish, on top of this pour the sauce from above and finally top with the cheese. It is important that all the pasta is covered with the sauce as this allows the pasta to cook. Place in the oven for 30ish minutes until the top is nice and golden.
Simple things to change
Try putting peppers, mushrooms, kidney beans in at the same time you add the mince.
For a richer sauce add sauce try adding half a cup of red wine to the tomatoes and allow longer for the sauce to thicken.
If you have trouble getting the pasta to cook try either pre-boiling it for a couple of minutes or easier cover the oven pan with tin foil for the first 20 minutes of cooking before removing it to allow the top to golden.
If the top doesnt go golden properly after 30ish minutes cheat and put it under a low grill watching carefully.
If the top goes golden quickly and the pasta isnt cooked yet cover with tin foil
