Red Onion and Pepper Relish

25 grams butter
1 red onion
1 red pepper
1 tbsp brown sugar
1/2 glass red wine
splash of red wine vinegar


Dice up the onions and peppers so they are about 5mm square. Melt the butter in a flat bottomed pan, once melted add the onion and peppers. After about a minute or so (the onions should have just softened but not gained color) add the sugar. Allow the sugar to coat the onions and peppers allow the vegetables to caramalise.

Add the red wine and then the red wine vinegar. This should be allowed to simmer until the liquid starts to thicken, if you want to speed this up you can add a little more butter.
