Preparation time: 15 minutes
Cooking time: 45 - 60 minutes
2 1/4 cups flour
1 1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda (mix with bananas)
1/2 cup butter
1/2 tsp salt
3 really ripe, disgusting to eat, bananas
3 eggs, divided
1 teaspoon vanilla
1 cup coconut
Mix the dry ingredients in a bowl. Add the shortening, eggs (not the two whites... Just the rest of â€˜em). And then beat this for two minutes with an electric mixer. Add the rest of the bananas and vanilla and beat for one minute more. Put into a 9â€ square cake pan that you have greased and floured. Prepare the topping.
Whip the two egg whites until stiff. Fold in 1 cup of brown sugar and 1 cup of coconut. Spread this on top of the unbaked cake. Poke some holes right through to the bottom of the pan with a skewer. This will help hold the topping on once the cake is baked. Bake at 350 degrees for 45 minutes to 1 hour.
If you can keep it, it tastes even better the next day, but our family has yet to find that out.
