Yvonne Harris' Banana Cake

Saw this one day on CITY TV. They made it and the people in the studio went nuts. Who Yvonne Harris is, I have no clue, but her banana cake is amazing.

Preparation time: 15 minutes
Cooking time: 45 - 60 minutes

Serves: 9


2 1/4 cups flour
1 1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda (mix with bananas)
1/2 cup butter
1/2 tsp salt
3 really ripe, disgusting to eat, bananas
3 eggs, divided
1 teaspoon vanilla
1 cup coconut


Mix the dry ingredients in a bowl. Add the shortening, eggs (not the two whites... Just the rest of ‘em). And then beat this for two minutes with an electric mixer. Add the rest of the bananas and vanilla and beat for one minute more. Put into a 9” square cake pan that you have greased and floured. Prepare the topping.


Whip the two egg whites until stiff. Fold in 1 cup of brown sugar and 1 cup of coconut. Spread this on top of the unbaked cake. Poke some holes right through to the bottom of the pan with a skewer. This will help hold the topping on once the cake is baked. Bake at 350 degrees for 45 minutes to 1 hour.

If you can keep it, it tastes even better the next day, but our family has yet to find that out.
