Mom's Kentucky Gingerbread

Ingredients

3 eggs
2 tsp soda
2 Tbsp hot water
1 cup molasses
1 cup boiling water
2 cups flour
1 cup sugar
1 cup shortning (melted)
1 tsp cloves
1 tsp ginger
1 tsp cinnamon


LEMON SAUCE

Lemon juice, water (about half and half) sugar to taste.. . . boil and thicken with
cornstarch&water. If you use real lemons, grate zest and throw that in too.


Method

Heat over to 350 F. Grease a 13x9 cake pan. Blend eggs, sugar, molasses, shortning and
spices in a large bown. Beat very well untill batter is smooth.

Dissolve soda in 2 Tbsp. Hot water and stir in. Sift flour into mix and beat very well again.

Add boiling water and beat a few seconds to blend we.. Batter will be very thin.

Pour into prepared pan and bake about 45 mins. Or till top springs back when touched in
center.
