Thai Rice

I made this the other day to spice up my rice.

3 cups of cooked jasmine rice (white long grain will do)
half of a cucumber chopped into small pieces
1/2 cup of peanuts
tbsp of dried shrimp paste
chillies (as perferred)
1/2 cup of green onions
1/4 cup of fresh cilantro
1/3 cup of fresh mint

2 tbsp fish sauce
2 tbsp lime juice
2 tbsp sesame oil
2 tbsp peanut oil
1 1/2 tsp of sugar


Mix liquid ingredients together and put aside.

Mix rice with other ingredients. Taste and adjust as desired. Mix in sauce. Again taste and adjust. Sprinkle with black pepper.

Serve with Thai Roast Chicken.
