Gnocchi with feta and cherry tomatoes

Ingredients

5 cups of Gnocchi (I get the fresh spinach gnocchi from the Vic Market Deli), 5 cloves of garlic, 1 tin of crushed tomatoes, 200 mls cream, 1 punnet of cherry tomatoes, 1 bunch of basil, 2 tbspns olive oil, 400 grams of good quality greek or goats feta.

Method

Crush or finely chop 3 of the cloves of garlic, heat oil in a pot or pan (I prefer a pan), chuck in the garlic and 10 secs later put in the tinned tomatoes.
Let this simmer lightly and reduce for 20 minutes, then put in the cream, simmer for 5 minutes. Chop the cherry tomatoes into halves and chop the final two garlic cloves into quarters, chuck these in with the sauce. Let simmer for a further 10 minutes. Meanwhile place a large pot of water on to boil. When it's boiling put the gnocchi in and take the gnocchi out once it rises to the top. Chop up half of the basil and put it in the sauce two minutes before serving. Serve gnocchi with a generous helping of the sauce, top with chopped feta and garnish with chopped basil. Oh it is so yummy! I think I'll make it tonight!
