2 yellow peppers, sliced into strips
2 red peppers, sliced into strips
8 oz mozzarella cheese, sliced
4 medium zucchini, sliced
1/3 cup black olives, pitted
salt & pepper, to taste
2 cloves of garlic, crushed
2 bunches of fresh basil, chopped
4 tbsp olive oil
In a lightly greased casserole dish; arrange peppers, mozzarella and zucchini. Top with olives and season with salt and pepper.
In a small bowl; mix garlic, basil and oil. Pour over vegetables and cheese. Bake in preheated 350 F oven for 25 to 30 minutes or until golden brown.
