5 lb pork tenderloin, sliced in thick slices
1 medium onion, finely chopped
2 lb mandarin oranges, peeled & pulsated in blender
2 cup maple syrup
In a small skillet; fry onion until translucent.
Place pork in slow cooker overnight. Add onions on top of pork.
In small bowl; mix orange mixture and syrup. Pour into slow cooker. Let sit over night. Cook on high setting for approximately 4 hours. Serve over rice or mashed potatoes.
