Lemon Garlic Chicken

2 tbsp butter
4 chicken breasts, boneless & skinless
3 garlic cloves, minced
2 cup water
3/4 cup rice
2 chicken bouillon cubes
1 lemon, halved
1/2 cup broccoli florets
1/2 cup carrots, sliced
1/2 cup cauliflower florets


In a large skillet; melt 1 tablespoon butter. Add chicken and cook over medium-high heat for 5 to 7 minutes or until lightly browned. Add remaining butter and garlic; cooking for a few minutes.

Add water, rice, bouillon cubes and juice from 1/2 lemon. Bring to a boil. Cover, reduce heat and simmer for 20 minutes.

Add broccoli, carrots and cauliflower. Continue cooking for 5 minutes or until chicken juices run clear.
