cucumber and onion vinegar salad

Ingredients

2 large english (seedless) cucumbers
1 small red onion
1/4 cup cilantro, chopped
3/4 cup rice vinegar
1/4 cup granulated sugar
water
kosher salt

Method

in a saucepan over medium heat, melt together the sugar with 1/4 cup of water.

in a bowl, mix together rice vinegar with warm water, until the vinegar is no longer harsh but still present (about 1/4 cup, more or less).

when the sugar is a thick syrup, take off the heat. when cooled, add to the vinegar and water.

peel the two cucumbers and cut into 1/4 inch slices. put cucumber in a medium-sized bowl. cut the top and bottom off of the red onion, and peel the outer layer. slice very thinly into half rounds and add to cucumber. add the cilantro.

pour the vinegar mixture over the salad. sprinkle with kosher salt to taste. can be served immediately or left to marinate for more flavor.
