Brussels Potato Salad

1 cup brussel sprouts
1 tbsp plain yogurt
1 tbsp mayonnaise
1 tbsp orange juice
1/4 cup fresh parsley, chopped
salt & pepper, to taste
1 large orange, peeled & sectioned
1 lb potatoes, cooked & diced


In a small saucepan over medium heat, cook brussel sprouts until tender. Drain, cool and slice.

In a large bowl; stir yogurt, mayonnaise, orange juice, parsley, salt and pepper until well blended. Add orange sections, brussel sprouts and potatoes. Toss gently to evenly coat. Cover and chill several hours.
